Cleansing Cranberry Chutney

Cranberries are one of the most potent cleansers and protectors of the kidneys. They contain the most antioxidant phenols comparted to 20 commonly eaten fruits. This recipe includes ginger, another potent antioxidant, and granny smith apple, an excellent digestive aid and intestinal cleanser.

This cranberry chutney will be an excellent offering at Thanksgiving meal, but is also good anytime of year.

This recipe yields 2 1/2 cups and will keep in the refrigerator for several weeks.


Ingredients

1 large Granny Smith apple
1 cup orange juice
3 cups fresh cranberries (one 12-ounce bag)
3 Tbs white wine or rice vinegar
1/3 cup agave or maple syrup
1/4 tsp. salt
1/4 tsp. ground ginger


Method

Dice the apple into small pieces, about 1 1/2 cups.
Pour the orange juice and cranberries into a sturdy 2 or 3-quart saucepan.
Cook over medium-high heat.
Add the apple, vinegar, and seasonings, and stir all together.
Cover the pan and bring to the boil over high heat.
Stir the ingredients, reduce the heat to medium
Cook covered for about 5 minutes, until all the cranberries have burst.
Uncover the pan, reduce the heat, and simmer for another 5 minutes, until the chutney is thick.
Cool to room temperature before serving.
The Chutney will keep in the refrigerator several weeks, longer if you freeze it.
